Lazy Casserole

Last night, James and I whipped up an edited version of this "lazy casserole," and we pretended it was even more enjoyable because it was a hearty meal to warm us up on a chilly night (it so wasn't -- what is UP with our crazy warm southern winter?!) Ever since I saw the recipe via Pinterest, I knew we had to try it. So, without further ado, here's how to make it:

Ingredients: 
4 sausages (beef or pork)
1 pound potatoes
1/2 pound carrots
1/2 bell pepper
1 large onion
1 fennel bulb
2 garlic cloves
2 tbsp oil
freshly cracked black pepper
1 1/2 tsp Italian herbs
1/2 cup chicken broth
4 tbsp balsamic vinegar 
Here's the low-down, broken down how-to: 
Dice and chop up all vegetables -- and any others -- to a size that you prefer. For our "casserole," we used fennel, sweet onion, mushrooms, red potatoes, baby carrots and pre-cooked chicken and apple sausage (yum). Pretty much any combination of veggies and meat will work just fine. Mix seasonings, broth and balsamic vinegar in a bowl, and pour it over the vegetables. Bake for about 1 hour in the oven at 450 degrees, and you'll have one delicious "lazy casserole."
