Cooking: Stovetop Chicken Pot Pie

Ever since I met James, when I cook a meal, I feel like I'm competing just a teeny tiny bit with his mother's cooking. She is one of the best cooks I've ever met, and James raves about the meals he and his three brothers ate growing up. Everyone remembers a meal mom made that wasn't your favorite, (salmon croquettes, anyone?) but when I asked him once if his mom ever made anything terrible for dinner when he was a kid, he actually couldn't think of a single thing!


Let me say that James is not a food critic. He happily eats whatever I put in front of him, even if the chicken is a little dry and the "homemade sauce" I whipped up is a little on the soupy side. James's favorite dish of all time is chicken pot pie. It is not mine. Something about the ooey gooey and the soggy bread makes me cringe a little. And let's be honest, it's not an easy dish to make.

Well, friends, I have found a recipe for STOVETOP chicken pot pie that is, dare I say, one of the tastiest dishes I have ever eaten in all my 27 years - and I highly recommend it. It is easy to make, too. The trick, you see, is that you make biscuits in the oven, and the rest on the stove. Ooey gooey grossness problem = solved!

  1. Thank you for the review on the stove top version. I, on the other hand, went with the "Mom" version via Southern Living and it too was delicious and actually super easy to make. I received another request for it last night and I must add that this request came while having dinner at the OK Cafe (which says a lot because their chicken pot pie is to die for). So, give the Mom version a shot as well...it makes a beautiful dish that will make you proud! Glad to see you are settling in and enjoying your new home :-)
