Homemade enchiladas

Last Friday night I ventured into the kitchen and made James and me Lindsay and her mom's famous enchiladas. I made the recipe a little bit "healthier" by using 2% milk cheese, whole wheat tortillas and ground turkey. (Oh, and throwing in a couple of Skinnygirl Margaritas - my new fave.)

Enchiladas Recipe a la Lindsay:
1 lb ground beef, turkey or chicken
1 taco seasoning packet
1 can fat-free refried beans
1 pack soft-taco size flour tortillas
2 cans (or 1 big can) enchilada sauce
1 pack shredded Mexican cheese

Brown meat, drain.
Add taco seasoning packet according to directions (i think 2/3 cup of water)
Mix in can of beans
Preheat oven to 350
Spray your pan with PAM
Pour a thin layer of enchilada sauce in bottom of pan (just to coat it)
Put tortilla in pan, add meat/bean mixture to middle of tortilla, and roll it up
Keep doing this until the pan is full of rolled up tortillas -- about 8, and then you can put 2 going the other direction if you have room
Pour the remainder of the enchilada sauce over the top -- make sure there isn't any "white" showing, or it will get crunchy
Top with a couple handfuls of cheese and put in oven for about 25 minutes. If it isn't brown on top, broil for a few until it looks yummy!

The enchiladas were delicious, and I scored a few brownie points with the hubs. He actually said they were "better than if we'd ordered them out at a restaurant." HA! Thanks, Lindsay and Jill!

  2. i love making homemade enchiladas! i make them almost the exact same way except i add onion and sometimes green chilis cuz my man likes spicy food ;)
    so yummy!
