Ham and Artichoke Quiche


James and I cooked up a tasty salad and ham + artichoke quiche last night, and boy, was it all delish. The salad included all of my favs - tomatoes, garlic + herb feta cheese and avocado, and the quiche recipe was quite easy:


1 can artichokes (quartered) or 9 oz. frozen package
2 eggs
Dash of oregano
Garlic powder or crushed garlic
1 pkg. Mozzarella cheese (grated - 8 oz.)
1/2 onion, grated
2 tbsp. milk or cream
Parsley
Pie shell
Diced ham

Fill the prebaked pie shell with artichokes, ham, cheese, onion. Mix eggs with garlic, oregano, parsley, salt and pepper to taste. Bake at 350 degrees for approximately 35 to 40 minutes (until set).

And now I am having leftovers for lunch!
